Easy Eats: Halloween Cake Mix Cookies

These make festive and easy gifts for friends, neighbors or a Halloween carnival bake sale.

Today is a Halloween twist on a recipe I featured before. I used Pillsbury’s cake mix and frosting with sprinkles for $1.25 each at . These make festive and easy gifts for friends, neighbors, or a Halloween carnival bake sale.

Halloween Cake Mix Cookies

1 box Halloween cake mix
2 eggs
½ C. oil
1 canister Halloween frosting with sprinkles

Pre-heat oven to 375. Mix together cake mix, eggs and oil. Reserve the sprinkles for decorating frosted cookies. Scoop onto un-greased cookie sheet and bake for 10 – 12 minutes. When cool, frost and top with sprinkles from both the frosting and reserved cake mix sprinkles. Makes about 18 medium size cookies.
